Chocolate for breakfast? Yes, I admit sometimes I enjoy this Chocolate Coconut Chia Seed Pudding for breakfast. It seems so decadent, but is actually quite healthy and keeps me satisfied until lunch.
Chocolate chia pudding tastes like a vegan chocolate mousse. Only this chocolate mousse contains healthy superfoods such as chia seeds, raw cacao nibs, coconut milk, etc. It is delicious served with fresh fruit or nuts.
The recipe is easy and involves no cooking. It does require a little advance planning though as the first stage takes a few hours (I start my Chia pudding the night before).
I used Aztec Gold Chia Seeds to make this tasty and nutritious pudding. Chia seeds absorb around 10 times their size in liquid. This allows the crunchy seed to take on a texture similar to a grain of tapioca. I will share a little more information about chia seeds after the recipe…

Chocolate Coconut Chia Pudding Recipe:
Ingredients Instructions Notes The chia pudding is ready to eat after stage one if you prefer. At that point, the texture is a little like a tapioca pudding with smaller grains than actual tapioca. For a smooth texture progress to stage two and blend the stage one pudding with a banana. This is wonderful served with fresh or frozen fruit such as strawberries, blueberries and cherries.
Note: the Goldilocks ratio for an overnight chia pudding seems to be 1/4 chia seed to 3/4 liquid. When I tried more, it turned out fine but the seed was swimming in liquid. When I tried less the pudding was too dry. Of course, your miles may vary as it is a matter of preference!

Serving Suggestions: Smooth Chocolate Coconut Chia Pudding:
This pudding is fantastic with fresh or frozen fruit such as strawberries, cherries, blueberries. It is also great with nuts. What doesn’t taste wonderful with chocolate?
I also top the pudding with raw unsweetened cacao nibs and unsweetened shredded coconut. The cacao nibs are bitter, but they have a strong chocolate scent. When included in a bite along with the chia pudding and coconut the nibs taste like a semi-sweet dark chocolate. They do add a little crunch.
