Everyone loves a brownie! I am no exception, so I set out to make a guilt-free, gluten-free brownie. The result is a dairy-free brownie containing popular super foods such as walnuts, almonds, coconut oil, and cacao nibs. Ripe bananas offer their natural sweetness and a moist texture.
I feel great after eating these brownies, I don’t get that feeling I sometimes get after indulging in a sugary treat. While rich in nutrition, these brownies are also rich in calories! Be sure and enjoy with moderation!

Quick and Easy Gluten-Free Banana Nut Brownies Recipe:
Ingredients
- Ingredients:
- 3 ripe bananas (depending on desired sweetness)
- 1/4 cup coconut oil
- 3 eggs
- 1 teaspoon pure vanilla extract
- 1 cup Morning Pep Almond Flour
- 3 Tablespoons Viva labs Cacao Powder (may adjust to taste!)
- .5 cup Viva Labs raw cacao nibs
- 1 teaspoon baking powder
- 1 cup walnuts
Instructions
- Preheat oven to 350 degrees F
- Grease a rectangular cake or baking pan with coconut oil
- I used a blender to mix, you may hand mix or use an electric mixer. The blender is easy and uses fewer dishes...
- Mix wet ingredients in the blender until well mixed (this took about a minute)
- Add dry ingredients to the blender and mix until well mixed
- Stir in walnuts (you max blend them if you want finely chopped walnuts)
- Pour mixture into greased cake pan. You will probably need to use a spatula.
- Place in oven (middle rack) and back about 25 minutes. When it is ready, you should be able to insert a toothpick or fork and have it come out clean. Baking time may vary by the pan and oven.

Almost Morning introduced me to almond flour. I use it to make pancakes, cakes, and these brownies. I find that everything I make with this flour turns out very moist, but sometimes have trouble holding together. However, I rarely make pancakes so it could be my technique. The brownies turned out very well!
