No Guilt Brownies Recipe

This No Guilt Brownie recipe features raw cacao nibs, almond flour, dried fruit for a healthy, low-guilt snack option. It is featured in Dr. Michael Mosley’s book The 8-Week Blood Sugar Diet. It is not as sweet as traditional brownies, the sugar source happens to be from high-fiber dates.

It is not as sweet as traditional brownies, the sugar source happens to be from high-fiber dates. The first time I made the recipe, I did not have dates so I substituted Gogi berries and unsweetened raisins. The taste and texture reminded me more of protein “bars” than brownies (think Lara Bar, Luna Bar or similar only homemade with fewer ingredients).

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients

  • 4 tablespoons coconut oil, melted
  • 31⁄2 ounces almond flour
  • Pinch of salt
  • 1⁄2 teaspoon baking powder
  • 31⁄2 ounces cacao nibs
  • 6 dates
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F
  2. using a little of the coconut oil, grease an 8-inch square baking pan.
  3. Mix all the ingredients together, transfer to the baking pan, and smooth over with a spatula.
  4. Bake for 20 minutes.
