Sometimes things just come together! I decided to create this savory cake recipe in response to the Fall 2015 Mary’s Secret Ingredients culinary subscription box. I wanted to create a recipe that features Sarah’s Sea Salt Tuscan Herb blend and would complement Jenkins Jellies Pepper Jelly.
This recipe was an experiment, but one I enjoyed eating. I am not sure whether to describe it as a cake or a bread. It is like a dense cake, only it is not very sweet. I wanted the sweetness to come from the Jenkins Jellies.
This Lemon Tuscan Herb Savory Cake is quite filling, so be sure to cut it into thin slices.
Lemon Tuscan Herb Savory Cake Recipe
Ingredients
- 1 2/3 cups Ultragrain Blend all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon Sarah's Salt with Tuscan Herbs
- 2 tablespoons sugar
- 1/2 cup (1 stick) Land o' Lake European Style Super Premium Butter
- 2 large eggs
- 2 teaspoons grated lemon peel
- 1/2 cup unsweetened almond milk (dairy milk works as well)
Instructions
- Preheat oven to 350°F.
- Lightly grease an 8 1/2x4 1/2x2 loaf pan. I like to use a light coating of coconut oil
- Stir flour, baking powder and Sarah's Sea Salt and grated lemon zest into medium bowl.
- Cream sugar and butter in large bowl until light and fluffy. Beat in eggs 1 at a time. Mix in the milk.
- Pour batter into prepared loaf pan.
- Bake for about 40 minutes, test by inserting a toothpick or fork into the center. When done, it will come out clean.
- Transfer cake to a cooling rack
- Serve in thin slices as it is quite filling.

Looks so yummy! We have a small lemon tree and it has a few lemons even now.. I’m so tempted to try this cake. I like the subscription box idea as well. It will give an opportunity to try something new.
I see it more as a bread like a Banana Nut Bread type of deal. It looks delicious! I so envision this as tea bread that you warm before serving… You are giving me ideas with this!
